Birthday Boy

Last week was full of fun events: Chad's birthday, the Caldwell Night Rodeo, and our 2nd wedding anniversary! To kick things off, we met with Chad's birthday for a BBQ at the house (and if you are wondering what I did with all those juicy red tomatoes from the garden, check out the recipe below) and then headed over to the Caldwell Night Rodeo. The rodeo was great, the beer was cold, and the company was wonderful.We ended the night with a few cold beverages on the back porch. It made for a rough Friday morning at work!

For Chad's birthday, he was dying for an Eberlestock Hunting Pack. Apparently, these are all the rage with Eastmans Hunting Journal. I was able to get my hands on the style he wanted with a little help from Jordan & Karen (thank you)! Somehow, I sneaked this (large) pack by Chad. On his birthday, I gave him several gifts including some new clothes and a hunting season basket full of all sorts of goodies. At that point, I could tell he was a little sad because he thought he hadn't gotten the pack. Surprise, I had it and he was (is) thrilled and hopefully it will bring him good luck this hunting season.Tomato-Mozzarella Salad
Ingredients:
Fresh tomatoes - cut into wedges (or halves if using cherry tomatoes)
Mozzarella balls - halved
Fresh basil - chopped
Extra virgin olive oil
Salt & Pepper

Instructions:
Mix together to taste. I generally do about half-and-half on the tomatoes and mozzarella balls... but I am in love with mozzarella. Toss the basil, EVOO, salt, and pepper to taste. Enjoy!
